Mediterranean Escargots / Hellenic Snail Processing Company [11/11/2019]


The company was funded to set up a processing plant for snails and snail eggs. The final products are standard snail meat-based meals and packaged caviar with snail eggs ready to eat.

The project has been implemented to a large extent through the "Start up Entrepreneurship" Action of the Competitiveness, Entrepreneurship and Innovation Operational Program (EPAnEK) and is expected to be completed by the end of 2019. The company has already signed an agreement with a company abroad while already participating in commercial foreign reports. It is also listed as a Success Story on the Enterprise Europe Network.

The investment is implemented in a family building installation with the appropriate configuration for snail processing breweries and their products. The brewery was equipped with the necessary machinery required for the production of the products. The design and implementation of the business idea was directly related to the subject of the investor's studies and was based on his many years of experience on the specific subject.

The goal was to create a Greek food delicatessen company, which will use innovative production methods and techniques with final products of high added value, competitive in the international market. The basic idea is to produce processed snails with low heat treatment, without the addition of sharpeners or preservatives. For this purpose, new processing and preservation techniques are introduced in order to preserve the organoleptic characteristics of snail meat and to produce products with taste characteristics that approach the "fresh".

The final products will be standardized in packages that will give the possibility of "traceability", the possibility, that is, the possibility of finding the origin of the snails, so that through the internet the consumer can know the place and the place of animal breeding as well as their production methodology. .

At the same time, it will be possible to present the wider area of ​​the farm with references to culture, culture, natural environment, products produced in the area and gastronomic traditions. Each package will be a different "journey" in Greek culture and Greek nature. In addition to snail products, products are created with snail eggs, snail caviar (French caviar), with high added value and little competition in the international market.

The products are designed with an extroverted orientation: it is estimated that at least 80% of the production will be sold in foreign markets and 20% in the Greek market.
